It's four weeks until I have to be bikini-ready for my vacation so I've really kicked my healthy lifestyle regime up a notch including pushing myself more at the gym and trying to eat clean!
These yummy egg, bacon, tomato and onion breakfast muffins are great for a quick breakfast or even lunch - just add a salad to bulk it out! Here's the recipe:
What you'll need:
300g fat free cottage cheese
4 large eggs
1 small onion, finely diced
Diced bacon or ham (optional)
Cherry tomatoes diced
Low calorie cooking spray
Salt and pepper
Method:
Preheat your oven to 180°C/160°C Fan/Gas 4.
Lightly spray 12 muffin cases with low calorie cooking spray or use silicon cases.
In a bowl, mix the cottage cheese, eggs, onion, tomato and salt & pepper with a fork until they're all mixed together well.
Spoon the mixture into the cases and bake in the oven for 25-30 minutes or until golden brown.
